Turkey Scallop

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Layer the dish

  1. Layer bread crumbs in a buttered dish and moisten with a little milk.

  2. Add a layer of chopped turkey and some stuffing, then dot with butter and sprinkle with pepper and salt.

  3. Repeat layers until the dish is nearly full.

  4. Add hot water to the turkey gravy and pour over the layers.

Top and bake

  1. In a bowl, mix eggs, milk, melted butter, salt, and enough cracker crumbs to thicken.

  2. Spread the mixture over the top, dot with butter, and cover with a plate.

  3. Bake for 45 minutes, then remove the plate and bake for an additional 10 minutes to brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the topping and set into a custard-like layer when baked.
Cracker crumbs
Thicken the egg and milk mixture so the topping holds together.
Bread crumbs
Soak up liquid and give the layers body between the turkey and stuffing.
Butter
Adds richness and helps the top brown in the oven.

The step that matters

Removing the plate for the final 10 minutes. Covering the dish traps steam and keeps the top pale and moist. Removing the plate lets dry heat brown the surface, so the topping must be uncovered for the browning stage to work.
