What each ingredient does

Duck
Provides the main meat, which becomes tender through slow stewing in liquid.
All-purpose flour
Coats the duck so it browns in the pan and helps thicken the sauce.
Onion
Browns in the fat to add savory sweetness and depth to the stew.
Stock or consommé
Forms the liquid that gently cooks the duck and becomes the base of the sauce.
Brown roux
Thickens the cooking liquid into a richer, glossier sauce.
Sherry
Adds acidity and a sharp, aromatic flavor to the finished sauce.

The step that matters

Stewing slowly until tender. Low, gentle heat breaks down the connective tissue in duck over time. Boiling hard toughens the meat and can make the sauce cloudy or greasy.

Swap the onion

How well each one fits the dish's main ingredients (pepper, flour, tomato, ketchup, lemon, sherry):

  1. Capsicumfits better
  2. Shallotfits better
  3. Arrowrootfits better
  4. Onionthe original

Fit is the average pairing score against pepper, flour, tomato, ketchup, lemon, sherry. Candidates are from the same food group and used in at least 100 recipes.
