Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Soak the cracker crumbs in a little of the milk.

  2. In a bowl, cream together the butter and sugar.

  3. Add the grated orange rind and beaten eggs to the mixture.

  4. Stir in the orange juice and soaked crumbs.

Bake

  1. Pour the mixture into a baking dish and bake for 30 minutes at 350°F (175°C).

What each ingredient does

Eggs
Bind the mixture and help it set into a custard-like texture when baked.
Butter
Adds richness and fat, giving a softer, more tender crumb.
White sugar
Sweetens the pudding and creams with the butter to add structure to the batter.
Cracker crumbs
Absorb liquid and thicken the mixture, giving it body.
Orange
Provides aroma and acidity from the zest and juice.
