Salted Almonds

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Blanch the almonds by pouring boiling water over them and letting them sit until the skins come off easily.

  2. Spread the almonds on a baking sheet and dot with small lumps of butter.

Roast and season

  1. Place in a hot oven at 400°F (200°C), stirring occasionally.

  2. When the almonds are golden brown, remove from the oven.

  3. Sprinkle with fine salt and a pinch of cayenne pepper.

  4. Cover with another baking sheet and shake thoroughly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Almonds
Provide the crunchy base that browns in the oven and carries the seasoning.
Butter
Adds fat that helps the almonds brown evenly and gives a rich flavour.
Fine salt
Seasons the almonds on the surface so the flavour stands out against their nuttiness.

The step that matters

Removing the almonds when golden brown. Nuts keep darkening from residual heat after leaving the oven, and sugars and proteins can scorch quickly. Pulling them at the right golden colour avoids a bitter, burnt taste.

Swap the almond

How well each one fits the dish's main ingredients (butter, pepper):

  1. Walnutfits about as well
  2. Black-eyed peafits about as well
  3. Almondthe original
  4. Lima beansfits about as well

Fit is the average pairing score against butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
