Tomato Salad

Ingredients

Directions

Make the tomato base

  1. Combine canned tomatoes, bay leaves, celery tips (or celery salt), ordinary salt, onion juice, and cayenne pepper in a granite pan.

  2. Stew gently for 3 hours.

  3. Soak gelatin in cold water for 30 minutes.

  4. Add the soaked gelatin and lemon juice to the tomatoes.

  5. Strain the mixture into molds.

Make the dressing

  1. Mix sugar, salt, mustard, milk, and eggs in a bowl for the dressing.

  2. Place the mixture in a double boiler and heat until it boils, stirring constantly.

  3. Add vinegar and bring to a boil again.

  4. If the dressing is too thick when cold, add cream to thin it out.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Canned tomatoes
Provide the main body and tomato flavour of the salad.
Gelatine
Sets the strained tomato liquid into a firm, sliceable mould.
Eggs
Thicken the cooked dressing as they set with heat, giving it body.
Vinegar
Adds sharp acidity that balances the sweetness of the dressing.
Milk
Mellows the dressing and adds richness to the egg mixture.

The step that matters

Heating the dressing over a double boiler. Egg proteins set with heat, so the dressing can curdle or turn grainy if it overheats. Gentle, constant stirring keeps it smooth and evenly thickened.

Flavor stand-ins for the onion

  2. Lettucebetter flavor fit
  3. Broccolibetter flavor fit
  4. Onionthe original

Fit is the average pairing score against tomato, celery, pepper, lemon, sugar, mustard, milk. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
