Why it works: Sugar and syrup match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓
To Preserve Fruit Whole, Without Sugar
Ingredients
Directions
Wipe the plums or remove the stems from the cherries or gooseberries.
Pack the fruit tightly in glass gem-jars without bruising.
Screw on the tops tightly and place the jars in a boiler of cold water, covering them completely.
Bring the water to a boil and watch the jars until the fruit is cooked.
Remove jars when the skins of the plums or cherries split or the gooseberries turn yellow.
Take off the jar tops and fill with fast-boiling water from the kettle.
Quickly screw the tops back on and let the jars cool, tightening again when cold.
