Why it works: Pineapple and sugar are a kitchen classic. They rank in the top 19% of all ingredient pairs, and cooks put them together in 4,841 recipes. Both carry 2-nonenal, which smells fatty, green. The science ↓
Pineapples Preserved
Ingredients
Directions
Prepare the pineapples
Clean the pineapples without removing the rind or leaves.
Place the whole pineapples in a large pot and cover with cold water.
Boil until tender enough to pierce through to the core with a straw.
Remove the pineapples from the pot and drain them.
Once cool, remove the leaves and pare off the rind.
Cut into round slices ½ inch thick, removing the core and leaving a small hole in each slice.
Weigh the slices.
Use 1 cup of sugar for each cup of fruit.
Layer with sugar
Cover the bottom of a deep dish with a thick layer of sugar.
Add a layer of pineapple slices.
Repeat layering until all slices are used, finishing with sugar on top.
Let stand for 24 hours.
Make the syrup and jar
Drain the syrup and place the slices in wide jars.
Boil the syrup until no scum rises.
Strain the syrup.
Pour the hot syrup over the pineapple and cover.

What each ingredient does
- Pineapples
- Provide the fruit that is cooked, sliced and preserved in sugar.
- White sugar
- Draws moisture out of the fruit and preserves it as a thick syrup.
The step that matters
Boil the syrup until no scum rises. Skimming off the scum as it rises removes impurities from the sugar syrup, so the preserve stays clear and keeps better.
