Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brains
Form the soft, delicate body of the dish once beaten and seasoned.
Butter
Adds richness and a smooth, moistening finish to the brains.

The step that matters

Soaking the brains. Soaking in lukewarm water draws out residual blood, which would otherwise darken the colour and add a bitter, metallic taste to the finished dish.

Swap the marjoram

How well each one fits the dish's main ingredients (pepper, bread, butter, sauce):

  1. Parsleyfits better
  2. Capersfits better
  3. Sagefits about as well
  4. Marjoramthe original

Fit is the average pairing score against pepper, bread, butter, sauce. Candidates are from the same food group and used in at least 100 recipes.
