Ingredients

Directions

The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the base

  1. Soak the bread crumbs in the boiling milk.

  2. Stir in the butter and beat until light.

  3. Let the mixture cool while you mince the meat and beat the eggs.

  4. Stir in the minced meat when the bread and milk mixture is nearly cold.

Bake and serve

  1. Season with pepper and salt, then add the beaten eggs and mix well.

  2. Pour the mixture into a well-greased baking dish.

  3. Bake in a brisk oven at 400°F (200°C) until the fondue is a light delicate brown.

  4. Serve immediately in the baking dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the mixture and help it set into a light, tender custard-like texture when baked.
Bread crumbs
Soak up the hot milk to form a soft, moist body for the fondue.
Milk
Moistens the bread and gives the fondue its soft, creamy interior.
Cold chicken, veal, or turkey
Provides the main meat flavour and substance of the dish.
Butter
Adds richness and fat, giving a softer texture and helping browning.

The step that matters

Bake until light delicate brown. Baking in a brisk oven sets the eggs and browns the surface; too long or too cool an oven can dry the fondue or leave it pale and wet inside.
