Graham Gems

Oven, in the book's wordsA very quick oven

Ingredients

Directions

The book says “a very quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

Make the batter

  1. Mix Graham flour with milk to form a stiff batter.

  2. Add a pinch of salt and one egg to the batter.

Bake

  1. Grease the gem pans with butter, heating them on the stove first.

  2. Put a little butter in the bottom of each pan to melt.

  3. Fill the pans two-thirds full with batter.

  4. Bake for about twenty minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Graham flour
Provides the bulk and the coarse, nutty structure of the batter.
Milk
Hydrates the flour and adds moisture and richness to the batter.
Egg
Adds structure and helps the gems set as they bake.

The step that matters

Grease and heat the gem pans before filling. Preheated, buttered pans start the batter cooking on contact, helping the gems set and brown and release cleanly instead of sticking.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
