What each ingredient does

Green tomatoes
Provide bulk and body, softening into the pickle as it heats.
Flour
Thickens the vinegar mixture so it coats the vegetables.
Mustard seed
Adds sharp, pungent flavour that develops in the vinegar.
Turmeric powder
Gives the pickle its yellow colour and earthy flavour.
Sugar
Balances the sharpness of the vinegar with sweetness.
Cider vinegar
Provides the acidity that preserves and flavours the pickle.

The step that matters

Heating without boiling. Once the vinegar mixture is added, the vegetables must be heated only until soft. Boiling can overcook them into mush and can scorch the flour-thickened mixture on the bottom of the pot.
