What each ingredient does

Soft shell crabs
Are the main ingredient; the whole soft shell is eaten after frying, so cleaning matters.
Beaten egg
Binds the crumb coating to the crab so it adheres during frying.
Fine bread or cracker crumbs
Form a crisp, golden coating that browns in the hot fat.

The step that matters

Frying in boiling fat for 8 to 10 minutes. Hot fat browns the crumb coating quickly and cooks the crab through. Frying for too long or at too low a heat can make the coating greasy or leave the crab overcooked, so size should guide timing.
