Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix the flour and salt.

  3. Slowly pour in half of the milk and mix until smooth.

  4. Add the eggs one at a time, beating vigorously after each addition.

  5. Gradually add the remaining milk.

Bake and serve

  1. Grease molds with butter and fill them about half full with the batter.

  2. Bake in the hot oven until golden brown.

  3. Serve immediately with butter, syrup, or lemon juice and sugar.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure that holds the puffed walls once the batter bakes.
Eggs
Provide structure and lift, so steam inflates the batter into hollow shells.
Milk
Supplies moisture that turns to steam in the oven and helps set the crust.

The step that matters

Keep the oven hot and do not open the door while baking. Popovers rise by steam expanding the batter quickly in a very hot oven. Opening the door early drops the temperature and the shells can collapse before the walls set.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
