Grape Fruit Sherbet

Ingredients

Directions

Prepare the juice

  1. Cut the grapefruit in half and remove the seeds and pulp, discarding the white skin.

  2. Squeeze the pulp through a sieve to extract the juice.

Make the syrup

  1. Boil the sugar and water together for 7 minutes.

  2. Soften the gelatin in cold water, then add it to the sugar syrup.

Combine and freeze

  1. Mix in the grapefruit juice and freeze the mixture like ice cream, but not as hard.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Grapefruit
Provides the main tart flavour and most of the liquid in the sherbet.
Sugar
Sweetens the sherbet and softens its texture by keeping ice crystals small.
Gelatin
Sets the mixture so it holds a smooth, firm body when frozen.

The step that matters

Freezing to a softer set. Freezing too long makes the sherbet hard and icy. Partial freezing, stirred as it firms, keeps ice crystals small and the texture smooth and scoopable.
