Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Enriches the sauce with fat and adds flavour as it browns the onion.
Flour
Thickens the cream sauce as it cooks.
Rich cream
Forms the body of the sauce and adds richness and smooth texture.
Bermuda onion
Adds sweetness and savoury depth when braised until lightly browned.
Sparkling tokay wine
Adds acidity and aroma to the sauce when stirred in just before serving.

The step that matters

Be careful not to break the chicken. Steaming and braising make the meat tender and fragile, so rough handling while turning or covering can tear the pieces apart before the sauce is added.
