Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat your oven to 350°F (175°C).

Make the batter

  1. Cream the butter and sugar together until light and fluffy.

  2. Add the eggs one at a time, mixing well after each addition.

  3. Stir in the sour cream and baking soda.

  4. Gradually add the flour, mixing until just combined.

  5. Fold in the raisins, currants, citron, cloves, and nutmeg.

  6. Pour the batter into a greased cake pan.

Bake

  1. Bake for about 1 hour or until a toothpick inserted in the center comes out clean.

What each ingredient does

Butter
Creams with sugar to trap air, giving the cake a tender, rich crumb.
Sugar
Sweetens the cake and creams with butter to help create a light texture.
Eggs
Add structure and richness, binding the batter as the cake sets.
Flour
Forms the structure of the cake as its proteins set during baking.
Sour cream
Adds moisture and a slight acidity that tenderizes the crumb.
Baking soda
Reacts with the acidity of the sour cream to help the cake rise and brown.

The step that matters

Creaming the butter and sugar. Beating butter and sugar until light and fluffy traps air bubbles that expand in the oven. Under-creaming leaves a dense, heavy cake, while the fat and sugar must be well combined before the eggs go in.

Swap the clove

How well each one fits the dish's main ingredients (butter, sugar, egg, cream, flour, raisin, currant):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Allspicefits better
  4. Clovethe original

Fit is the average pairing score against butter, sugar, egg, cream, flour, raisin, currant. Candidates are from the same food group and used in at least 100 recipes.
