Why it works: Gelatin and cream match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 1,628 recipes. Both carry acetic acid, which smells sour, vinegar. The science ↓

Rhubarb Jelly with Whipped Cream

Ingredients

Directions

Prepare the rhubarb

  1. Wash the rhubarb stalks and cut them into small pieces.

  2. Place the rhubarb in a pot with just enough water to prevent sticking.

  3. Cook until soft, then strain through a sieve.

Make and set the jelly

  1. For each pound of rhubarb, add a pound of sugar.

  2. For each quart of pulp, mix in 2 ounces of dissolved gelatin.

  3. Pour the jelly into a border mold and refrigerate until firm.

Unmold and serve

  1. Once set, unmold and fill the center with whipped cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Provides the tart flavor and the pulp that forms the body of the jelly.
Sugar
Sweetens the rhubarb and balances its acidity.
Gelatin
Sets the strained pulp into a firm jelly that holds its molded shape.
Whipped cream
Adds a light, rich contrast in texture and softens the tartness of the jelly.

The step that matters

Mixing dissolved gelatin into the pulp. Gelatin must be fully dissolved and evenly mixed into the warm pulp, or it will set in streaks or lumps. Too much or too little gelatin will leave the jelly either rubbery or too soft to unmold cleanly.

Swap the rhubarb

How well each one fits the dish's main ingredients (sugar, gelatin, cream):

  1. Cinnamonfits about as well
  2. Rhubarbthe original
  3. Nutmegfits about as well
  4. Gingerfits less well

Fit is the average pairing score against sugar, gelatin, cream. Candidates are from the same food group and used in at least 100 recipes.
