Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Provides the tart flavour and the fruit body of the jelly.
Gelatin
Sets the liquid into a firm, sliceable jelly as it cools.
Sugar
Sweetens the rhubarb and helps form the syrup base.

The step that matters

Stir the softened gelatin into the rhubarb mixture until well combined. Gelatin must be fully softened and evenly distributed before it is stirred in, or it can leave lumps and uneven setting. The mixture should be well combined so the jelly sets uniformly throughout.

Swap the rhubarb

How well each one fits the dish's main ingredients (sugar, gelatin, cream):

  1. Cinnamonfits about as well
  2. Rhubarbthe original
  3. Nutmegfits about as well
  4. Gingerfits less well

Fit is the average pairing score against sugar, gelatin, cream. Candidates are from the same food group and used in at least 100 recipes.
