Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Boil the macaroni until tender.

  2. Butter a baking dish and layer the macaroni with grated cheese, salt, pepper, and bits of butter.

  3. Repeat the layers until the dish is full.

Assemble and bake

  1. Cover the top with bread crumbs and more grated cheese.

  2. Pour enough milk over the top so it is just visible when pressing down the macaroni.

  3. Bake at 400°F (200°C) until nicely browned.

What each ingredient does

Macaroni
Forms the bulk of the dish and gives it its body.
Butter
Adds richness and helps the top brown during baking.
Grated cheese
Melts into the sauce and adds savoury flavour and creaminess.
Bread crumbs
Forms a crisp, golden topping when baked.
Milk
Provides liquid that turns into a creamy sauce around the pasta.

The step that matters

Adding the milk level. The milk should just show at the top when the macaroni is pressed down. Too little leaves the pasta dry, while too much can make the dish soupy and keep it from setting well.
