What each ingredient does

Tapioca
Thickens the stock as it cooks, giving the soup body.
Celery
Provides the main flavor and bulk of the soup.
Cream
Adds richness and a smooth, mellow texture.
Chicken
Adds savory depth to the stock.

The step that matters

Simmering the tapioca until the celery is tender. Tapioca needs prolonged heating in liquid to swell and thicken the stock fully. Stopping early leaves the soup thin and grainy, and it is hard to fix later without extra starch.

Swap the white pepper

How well each one fits the dish's main ingredients (chicken, celery, cream):

  1. Tarragonfits better
  2. Garlicfits better
  3. Thymefits better
  4. White pepperthe original

Fit is the average pairing score against chicken, celery, cream. Candidates are from the same food group and used in at least 100 recipes.
