Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold veal
Forms the meat body of the dish, setting firm within the gelatine.
Gelatine
Sets the cooking liquid into a firm jelly that holds the veal together when chilled.
Hard-boiled eggs
Add firm white and yolk contrast in the lined mold, giving structure to each slice.
Lemon
Adds acidity that brightens the rich, savoury meat and jelly.

The step that matters

Adding the gelatine before removing from heat. Gelatine must dissolve fully into the hot liquid, since it only sets properly when evenly distributed; undissolved clumps leave weak, grainy patches in the chilled jelly.

Swap the mace

How well each one fits the dish's main ingredients (veal, lemon, egg):

  1. Parsleyfits better
  2. Tarragonfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against veal, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
