Sweet-breads

Ingredients

Directions

Prepare the sweetbreads

  1. Parboil the sweetbreads in boiling water for 5 minutes, then remove the skin.

  2. Transfer the sweetbreads to cold water until completely cool.

  3. Slice the sweetbreads into pieces, not too thin.

Fry and make the gravy

  1. Roll the slices in beaten eggs, then in bread crumbs mixed with parsley.

  2. Fry in a mixture of butter and lard (more lard than butter) for 20 minutes until golden brown.

  3. Remove from the pan and add more butter, milk, and corn starch to the pan to create a thick gravy.

What each ingredient does

Sweetbreads
Provide the tender main body of the dish, which becomes firm and crisp when fried.
Eggs
Bind the bread crumbs to the slices so the coating adheres during frying.
Bread crumbs
Form a crisp, golden coating that browns in the hot fat.
Butter and lard
Fry the coated slices, adding richness and promoting even golden browning.
Milk
Forms the liquid base of the gravy with the starch.
Corn starch
Thickens the milk in the pan into a gravy.

The step that matters

Parboiling and cooling the sweetbreads. Parboiling firms the tissue so the slices hold together and can be removed from the membrane cleanly. Chilling in cold water stops the cooking so the meat stays tender rather than dry and crumbly when fried.

Swap the parsley

How well each one fits the dish's main ingredients (egg, bread, butter, milk, corn):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Parsleythe original
  4. Tarragonfits about as well

Fit is the average pairing score against egg, bread, butter, milk, corn. Candidates are from the same food group and used in at least 100 recipes.
