The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Sugar and pepper barely smell alike, yet cooks put them together in 19,401 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
The main protein that the brine penetrates and firms as it cures.
Saltpetre
Supplies nitrate that helps cure the meat and gives it its characteristic pink colour.
Coarse sea salt
Draws moisture out of the meat and carries seasoning into it while curing.
Sugar
Balances the saltiness and adds mild sweetness to the cured flavour.
Baking soda
Raises the brine's pH, which helps the meat stay tender during the cure.

The step that matters

Keeping the beef fully submerged in the brine. Any part of the meat exposed to air will not cure evenly and may spoil or discolour. Weighing it down keeps every surface in contact with the brine so the salt and cure penetrate uniformly.
