What each ingredient does

Corned beef
Provides the main substance of the dish, and its curing salts give it the characteristic pink colour and savoury flavour.
Beef stock or water
Keeps the beef submerged and moist during the long, gentle simmer, so it becomes tender rather than dry.
Onion
Adds aromatic sweetness and depth to the cooking liquid as it simmers.
Carrot
Adds gentle sweetness and aroma to the cooking liquid.
Bay leaf
Contributes a subtle herbal aroma to the cooking liquid.

The step that matters

Simmer gently without boiling. A rolling boil toughens the meat's proteins and can evaporate the liquid, leaving the beef dry and at risk of scorching. A gentle simmer lets the connective tissue break down slowly, producing tender meat.

Swap the onion

How well each one fits the dish's main ingredients (beef, carrot, parsley):

  1. Parsnipfits better
  2. Turnipfits better
  3. Potatofits better
  4. Onionthe original

Fit is the average pairing score against beef, carrot, parsley. Candidates are from the same food group and used in at least 100 recipes.
