What each ingredient does

Mustard
Provides the sharp, pungent flavor that defines the pickle.
Corn starch
Thickens the vinegar mixture so it clings to the vegetables.
Turmeric
Adds yellow color and a earthy, warm flavor.
Vinegar
Acidity that preserves the vegetables and carries the flavor.

The step that matters

Adding the mixture to boiling vinegar. Mix the spices with a little cold vinegar first so the corn starch does not clump. Then stir constantly while it cooks, since starch can settle and scorch on the bottom of the pot and the sauce needs to thicken evenly.
