Why it works: Capers and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 1,550 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Butter a porcelain pie plate.

  3. Pour in enough thick cream to fill the plate half full.

Assemble

  1. Drop the eggs side by side into the cream.

  2. Place a few capers on each yolk.

  3. Dust with minced parsley and fine bread crumbs.

  4. Add flakes of butter on top.

Bake

  1. Bake until the eggs are firm and slightly brown on top.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set into a firm structure as they cook, forming the main body of the dish.
Thick cream
Forms a rich, gently cooking base that keeps the eggs moist.
Fine bread crumbs
Add a light crust that helps the top brown during baking.
Butter
Adds richness and helps the top brown as it melts.

The step that matters

Bake until the eggs are firm and slightly brown on top. Eggs continue to set from residual heat after leaving the oven, so pulling them when the whites are just set keeps yolks soft. Overbaking turns the proteins firm and dry, toughening the texture.

Swap the parsley

How well each one fits the dish's main ingredients (cream, egg, capers, bread, butter):

  1. Nutmegfits about as well
  2. Parsleythe original
  3. Tarragonfits about as well
  4. Garlicfits less well

Fit is the average pairing score against cream, egg, capers, bread, butter. Candidates are from the same food group and used in at least 100 recipes.
