Why it works: Banana and wine work together. They rank in the top 14% of all ingredient pairs, and cooks put them together in 244 recipes. Both carry 1-octen-3-one, which smells mushroom, metallic. The science ↓
Baked Bananas
Ingredients
Directions
The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Preheat the oven to 350°F (175°C).
Select large red bananas and strip off one section of the skin.
Loosen the remaining skin and place the bananas in a baking pan with the uncovered side up.
Sprinkle the bananas with granulated sugar.
Bake and serve
Bake for 30 minutes.
If using wine, pour 1 tablespoon over each banana before serving.

What each ingredient does
- Large red bananas
- Form the main body of the dish; the flesh softens and turns tender as it bakes.
- Granulated sugar
- Sweetens the fruit and helps the surface caramelize and brown in the oven.

How well each one fits the dish's main ingredients (sugar, wine):
- Vanillafits better
- Applefits better
- Grapefits better
- Bananathe original
