  1. Pour ½ quart of milk over the gelatin and let it stand for 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the body of the cream and carries the sweetness and flavor.
Eggs
Yolks thicken the cream as they cook, and whites add lightness when folded in.
Gelatin
Sets the cream so it holds its shape when chilled.
Sugar
Sweetens the cream and balances the richness of the eggs and milk.

The step that matters

Adding the yolks to the hot mixture. Yolks can scramble if added to very hot liquid without care. Keep stirring continuously while the cream thickens so the egg proteins set smoothly rather than curdling.
