Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Cream the butter and sugar together until light and fluffy.

  2. Beat the eggs separately until well combined.

  3. Flour the currants and other fruits to prevent sinking.

Mix and bake

  1. Fold the eggs into the butter and sugar mixture.

  2. Gently mix in the floured fruits and pour the batter into two bread pans.

  3. Bake in a preheated oven at 350°F (175°C) for 1 to 2 hours, or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air, giving the cake a tender, rich crumb.
Eggs
Add structure as they set in the oven and help bind and lighten the batter.
All-purpose flour
Provides the structure that holds the cake together as it bakes.
White sugar
Creams with butter to aerate the batter and adds sweetness and browning.
Currants
Add fruit pieces throughout the cake, and their flour coating helps them stay suspended.

The step that matters

Flouring the fruit before folding it in. Dry flour coating helps fruit pieces grip the batter, so heavy currants and peel are less likely to sink to the bottom of the cake.

Swap the currant

How well each one fits the dish's main ingredients (butter, sugar, flour, orange, egg, almond):
