Ingredients

Directions

Prepare the cake

  1. Scoop out the inside of the sponge cake with a spoon, being careful not to create a hole.

  2. Place the cake on the serving dish.

Soak and fill

  1. Pour 1 cup of homemade wine into the cake and around the edge, allowing it to soak in.

  2. Once the wine is absorbed, fill the cake with custard.

  2. Top the cake with whipped cream.

What each ingredient does

Round high sponge cake
Forms the hollow base that holds the wine, custard and cream.
Homemade wine
Soaks into the sponge, adding moisture and a fruity, aromatic flavour.
Custard
Fills the hollow centre, adding richness and a creamy, moist texture.
Whipped cream
Forms a light, airy topping that adds richness and mild sweetness.

The step that matters

Scooping out the sponge cake. Scooping too close to the edge or bottom creates a hole, and the wall then cannot hold the wine, custard and cream. Leave a sturdy shell of even thickness.

Swap the almond

How well each one fits the dish's main ingredients (wine, cream):

  1. Chestnutfits about as well
  2. Almondthe original
  3. Hazelnutfits about as well
  4. Cocoafits about as well
