Almond Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Stir the eggs with sugar until light.

  2. Add flour and enough baking soda to cover the tip of a knife.

  3. Mix in the split almonds until well combined.

Bake and serve

  1. Pour the mixture into a bread pan and smooth the top with your hands or a small rolling pin.

  2. Brush the top with the egg yolk.

  3. Bake in a moderate oven at 350°F (175°C) until brown.

  4. Cut into slices while warm in the pan and toast until the sides are light brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure as they set during baking.
White sugar
Sweetens the cake and helps it brown in the oven.
Flour
Provides the main structure of the cake as it bakes.
Split almonds
Add texture and a nutty flavor to the crumb.
Baking soda
Reacts with the batter to help it rise and lighten.

The step that matters

Stir the eggs with sugar until light. Beating eggs with sugar traps air in the batter, which gives the cake lift and a lighter crumb. Under-whisking leaves it dense.
