What each ingredient does

Mutton
Forms the main body of the dish and provides the meat and fat that flavour the pan juices.
Flour
Thickens the gravy as it boils, giving it body and a smooth texture.
Currant jelly or acid jelly
Adds sweet-tart acidity that balances the rich, fatty flavour of the mutton.

The step that matters

Cook slowly, basting frequently. Slow cooking keeps the meat tender and moist while the surface gradually browns, and basting replaces moisture lost at the surface. Cooking too fast can toughen the meat and dry it out.

Swap the currant

How well each one fits the dish's main ingredients (mutton, pepper, flour):

  1. Limefits better
  2. Lemonfits better
  3. Raisinfits better
  4. Currantthe original

Fit is the average pairing score against mutton, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
