What each ingredient does

Chicken
Provides the main protein and meaty bulk that the salad is built around.
Hard-boiled egg yolks
Mashed into the dressing, they make it rich and creamy and help bind it.
Butter
Adds richness and a smooth, creamy texture to the dressing.
Vinegar
Adds acidity that sharpens the flavour and balances the richness of the dressing.
Celery
Contributes crisp texture and fresh, mild flavour to the salad.

The step that matters

Mashing the yolks while hot and adding the vinegar gradually. Warm yolks blend more smoothly with butter and mustard into an even emulsion. Adding vinegar slowly lets the dressing thicken evenly rather than separating or turning thin and curdled.

Swap the cucumber

The recipe marks cucumber as optional. How well each one fits the dish's main ingredients (chicken, celery, egg, butter, pepper, mustard, vinegar):

  1. Capsicumfits better
