What each ingredient does

Ripe currants
Supply natural pectin and acidity, which together give the jelly its gel structure and tang.
Sugar
Adds sweetness, helps the mixture set into a gel, and preserves the jelly.

The step that matters

Boil rapidly after adding the sugar. Sugar, pectin and acid only form a firm gel once the mixture is concentrated by a hard boil. Boiling too gently leaves the jelly runny, while boiling too long can make it stiff and dull in flavor.
