Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells as it cooks, thickening the milk into a creamy custard body.
Egg yolks
Thicken the custard and add richness as they set gently with the milk.
Egg whites
Whipped into a stiff foam that forms a light, airy topping that browns in the oven.
Milk
Forms the liquid base that the tapioca cooks in and becomes the custard.
Sugar
Sweetens the custard and caramelizes on the egg white topping as it browns.

The step that matters

Stir rapidly after adding the egg yolks. Stirring keeps the egg yolks moving so they blend evenly and cook smoothly instead of curdling or forming lumps as the custard thickens off the heat.
