Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Whip the egg whites to a stiff froth.

  2. Beat in half of the powdered sugar.

  3. Cream the remaining sugar and butter together.

  4. Gradually beat in the flour with the sugar and butter mixture.

  5. Add the whipped egg whites and mix well.

  6. Flavor with vanilla or lemon.

Bake

  1. Bake in a moderate oven at 350°F (175°C) for 1 to 1¼ hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to a stiff froth, they trap air and give the cake its light, airy structure.
Butter
Creamed with sugar, it adds richness and a tender crumb.
Powdered sugar
Sweetens the cake and helps create a fine, tender texture when creamed and beaten.
Flour
Provides the main structure that holds the cake together as it bakes.

The step that matters

Add the whipped egg whites and mix well. Whipped egg whites hold air that makes the cake rise. Folding or mixing too vigorously after adding them can knock out this air, leading to a dense cake.

Swap the vanilla

How well each one fits the dish's main ingredients (sugar, egg, butter, flour):

  1. Raisinfits better
  2. Vanillathe original
  3. Figfits less well
  4. Lemonfits less well

Fit is the average pairing score against sugar, egg, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
