Variegated Cake

Ingredients

Directions

Make the batter

  1. Cream the butter and powdered sugar together until light and fluffy.

  2. Add the sweet milk and mix well.

  3. Gradually add the flour and egg whites alternately, mixing until combined.

  4. Mix the baking powder with a little flour and stir it in gently.

  5. Flavor the batter with a few drops of bitter almond extract.

Color and bake

  1. Divide the batter into three parts: color one with spinach coloring, another with cochineal or fruit coloring, and leave the third part white.

  2. Pour the colored batters into jelly-cake pans and bake until a toothpick comes out clean.

What each ingredient does

Butter
Creaming with sugar traps air and gives the cake a tender, rich crumb.
Egg whites
Add structure and lift as they set in the oven, supporting the crumb.
All-purpose flour
Forms the main structure of the cake as its proteins set during baking.
Baking powder
Releases gas in the batter so the cake rises and becomes light.
Powdered sugar
Sweetens the batter and, creamed with butter, helps create a light texture.

The step that matters

Pour the colored batters into jelly-cake pans and bake until a toothpick comes out clean.. Baking powder starts releasing gas as soon as it is wet, so batters should go into the pans and the oven without delay. Underbaking leaves the centre wet and sunken, while overbaking dries the crumb, so the toothpick test is the check to rely on.

Swap the spinach

How well each one fits the dish's main ingredients (sugar, butter, milk, egg, flour, almond):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Chivefits better
  4. Spinachthe original

Fit is the average pairing score against sugar, butter, milk, egg, flour, almond. Candidates are from the same food group and used in at least 100 recipes.
