Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Coagulate and carry impurities to the surface, clarifying the liquid as it boils.
White sugar
Dissolves into the water to sweeten the punch and balance the citrus acidity.
Lemons
Supply the juice and acidity that give the punch its bright, sharp flavour.
Oranges
Add juice and sweetness, rounding out the citrus flavour.
Rum or whisky
Adds alcoholic strength and warm aroma to the punch.

The step that matters

Mix in the egg whites and bring to a boil again. Egg whites must be stirred in evenly before heating. As the mixture boils, the whites set and trap cloudy particles, which rise as a foam. Skimming and straining this removes the haze and leaves a clear punch.

Swap the orange

How well each one fits the dish's main ingredients (lemon, sugar, egg, rum):

  1. Vanillafits better
  2. Orangethe original
  3. Pineapplefits about as well
  4. Limefits less well

Fit is the average pairing score against lemon, sugar, egg, rum. Candidates are from the same food group and used in at least 100 recipes.
