What each ingredient does

White sugar
Provides sweetness and, as it dissolves and boils, forms the body of the candy.
Cream
Adds fat and moisture, giving the candy a softer, creamier texture.
Grated cocoa-nut
Adds coconut flavor and texture to the candy.

The step that matters

Boiling over low heat for 10 minutes. Sugar must reach the right concentration to set firm when cooled. Boiling too briefly leaves the candy soft and sticky, while heating too hard can scorch the sugar and cream, so steady low heat and timing matter.

Swap the cocoa

How well each one fits the dish's main ingredients (sugar, cream):

  1. Almondfits better
  2. Pistachiofits better
  3. Chestnutfits better
  4. Cocoathe original

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
