Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Rabbits Surprised

Ingredients

Directions

Prepare the rabbits

  1. Skewer and stuff the rabbits as for roasting.

  2. Roast the rabbits and remove the meat from the bones, keeping the bones whole.

Make the stuffing

  1. Chop the meat finely and mix with parsley, lemon peel, beef marrow, cream, and a little salt.

  2. In a mortar, beat the hard-boiled egg yolks with butter, then mix with the meat mixture.

  3. Stew the mixture for five minutes, then lay it back into the rabbits' bodies to make them appear whole.

Brown and serve

  1. Brown the rabbits all over with a salamander.

  2. Pour thick gravy into the dish and place myrtle in their mouths.

  3. Serve with the livers boiled and frothed.

What each ingredient does

Young rabbits
Provide the main meat, which is roasted, boned and reshaped for serving.
Beef marrow
Adds richness and moisture to the chopped meat stuffing.
Hard-boiled egg yolks
Bind the stuffing with a smooth, rich, creamy texture.
Butter
Adds fat that enriches the yolk mixture and helps it bind smoothly.
Cream
Adds moisture and softness to the stuffing mixture.

The step that matters

Stew the stuffing for five minutes. Stewing gently cooks and binds the mixture so it holds its shape when returned to the rabbits. Overcooking can make it dry and crumbly.
