Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Slice the salt pork thinly and place a layer in the bottom of a baking pan.

  3. Lay the fish on top of the pork, then cover the fish with more slices of pork secured with picks.

  4. Add a little water to the pan.

Bake and serve

  1. Bake for one hour.

  2. Pour the sweet cream over the fish.

  3. Once the fish is well done, remove it to a hot platter.

  4. Strain the gravy and thicken it with flour.

  5. Serve with any good dressing.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fish
Forms the main body of the dish and cooks through in the oven.
Salt pork
Bastes the fish with rendered fat and adds savory flavor as it bakes.
Sweet cream
Adds richness and moisture, and combines with the pan juices to form the gravy.
Flour
Thickens the strained gravy so it clings to the fish.

The step that matters

Removing the fish once it is well done. Fish turns dry and flaky-tough once overcooked, because proteins continue to tighten with prolonged heat. Checking for doneness, when the flesh flakes easily, keeps it moist.
