Turbot a LA Creme

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the sauce

  1. In a double boiler, pour in the milk and add a small bag containing the onion, salt, pepper, and sausage seasoning, then tie the bag securely.

  2. Bring the milk to a boil, then remove from heat.

  3. After removing the seasoning bag, stir in the beaten egg and flour.

  4. Add the butter and strain the mixture if it is not smooth.

Assemble and bake

  1. In a baking dish, layer pieces of cooked fish with cracker or bread crumbs, pouring some of the white sauce over every two layers.

  2. Bake for 30 minutes at 350°F (175°C).

What each ingredient does

Milk
Forms the base of the white sauce, giving it liquid body and a smooth, creamy texture.
Egg
Thickens the sauce as it cooks and adds richness to the custard-like base.
Flour
Thickens the sauce by absorbing liquid and gelatinizing when heated, giving it body.
Butter
Adds fat for richness and a smooth, silky mouthfeel to the sauce.
Cooked white fish
Provides the main protein and flaky texture of the dish.

The step that matters

Stir the egg into the hot milk gently. Egg proteins set at around 160°F, so adding beaten egg to very hot milk without tempering can scramble it. Keeping the heat gentle and stirring steadily helps the sauce thicken smoothly, and straining afterward catches any lumps.

Swap the onion

How well each one fits the dish's main ingredients (milk, pepper, egg, flour, butter, fish, bread):
