What each ingredient does

Oysters
Provide the main flavour and texture of the filling.
Egg yolks
Enrich and thicken the filling as they set with gentle heat.
Bread crumbs
Soak up liquid and help thicken the filling into a spoonable texture.
Milk
Adds moisture and richness, softening the bread crumbs and mellowing the filling.
Butter
Adds fat and richness to the boiled liquor, carrying flavour.
Oyster liquor
Supplies the briny, savoury base for the filling.

The step that matters

Stirring in the egg yolks off the heat. Egg yolks thicken when heated but can scramble if added to a very hot liquid. Removing the pan from the heat first lets them thicken the filling smoothly.
