What each ingredient does

Beef
Provides the main protein, which becomes tender during the long gentle simmer.
Onions
Soften and brown in the butter, adding sweetness and depth to the sauce.
Curry powder
Supplies the spice blend that gives the dish its characteristic aroma and flavour.
Milk
Adds liquid and richness, mellowing the sharpness of the spices in the sauce.
Butter
Carries the spices and onions, adding fat and a rich mouthfeel to the sauce.

The step that matters

Simmer while stirring constantly. Milk-based sauces scorch easily on the bottom of the pan, and constant stirring spreads heat evenly and prevents burnt flavour. Gentle heat keeps the milk from curdling and lets the beef become tender.
