Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the meat that becomes tender during long, slow simmering.
Potatoes
Form the layers that absorb cooking liquid and thicken the stew as they break down.
Salt pork
Adds fat and savory flavor that seasons the meat and liquid as it renders.

The step that matters

Reduce heat and simmer for 2 hours. Once the pot is covered and heated, the heat must drop to a gentle simmer. A hard boil toughens meat proteins and can break up the potatoes, while slow simmering lets collagen in the veal soften into tender meat.

Swap the onion

How well each one fits the dish's main ingredients (veal, potato, pork, pepper, sage):

  1. Capsicumfits better
  2. Carrotfits better
  3. Tomatofits about as well
  4. Onionthe original

Fit is the average pairing score against veal, potato, pork, pepper, sage. Candidates are from the same food group and used in at least 100 recipes.
