What each ingredient does

Raw oysters
Add briny flavour that gives the stuffing a savoury, sea-like taste.
Bread
Forms the bulk of the dressing, soaking up juices and giving it a soft texture.
Chopped celery
Adds moisture and a fresh, mildly sharp crunch to the dressing.
Pork
Adds fat and richness to the dressing, keeping it moist and savoury.

The step that matters

Skimming the boiling water. Scum rising during boiling is made of coagulated proteins and impurities; removing it keeps the broth clear and the turkey's flavour clean.
