Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Buckwheat meal
Forms the main body of the cakes and gives them their earthy, nutty flavour.
Wheat flour or indian meal
Adds gluten or starch structure so the batter holds its shape while baking.
Yeast
Ferments the batter, producing gas bubbles that make the cakes rise and turn light.

The step that matters

Letting the batter rise until very light. Yeast needs a warm, undisturbed period to produce enough gas for a light, airy crumb. Underproofed batter stays dense and gives heavy cakes.

Swap the buckwheat

How well each one fits the dish's main ingredients (wheat, butter):

  1. Cinnamonfits about as well
  2. Buckwheatthe original
  3. Nutmegfits less well
  4. Parsleyfits less well

Fit is the average pairing score against wheat, butter. Candidates are from the same food group and used in at least 100 recipes.
