Real Cheesecake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Beat the cheese until it reaches a butter-like consistency.

  2. Mix in the butter thoroughly.

  3. If desired, sweeten with sugar and add spices before mixing in the eggs.

  4. Gradually add the beaten eggs, mixing until smooth.

Assemble and bake

  1. Line the bottom and sides of a pan with puff pastry.

  2. Fill the pastry with the cheese mixture.

  3. Grate nutmeg over the top.

  4. Bake in a moderate oven at 350°F (175°C) until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rich cheese
Provides the main body and flavor of the filling, setting into a creamy custard.
Butter
Adds richness and a smooth, silky texture to the filling.
Eggs
Set during baking to bind the filling into a firm, sliceable custard.
Puff pastry
Forms the crisp, flaky shell that holds the filling in the pan.

The step that matters

Adding the eggs gradually. Adding beaten eggs a little at a time while mixing keeps the emulsion stable and the filling smooth. Adding them all at once can cause lumps or curdling, which leaves the baked texture grainy.

Swap the nutmeg

How well each one fits the dish's main ingredients (cheese, butter, egg, sugar):

  1. Nutmegthe original
  2. Cinnamonfits about as well
  3. Capersfits less well
  4. Parsleyfits less well

Fit is the average pairing score against cheese, butter, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
