Ingredients

Directions

Make the custard

  1. Soak the isinglass or gelatine in cold water until softened.

  2. Boil the softened isinglass in 1 pint of cream with ¼ pound of sugar and optional rose leaves in a muslin bag until dissolved.

  3. Remove from heat and let cool.

  4. Beat together 4 whole eggs and 4 egg yolks until light and thick.

  5. Gradually stir the beaten eggs into the cream mixture.

  6. Return to low heat, stirring gently until it simmers, but do not let it boil.

  7. While warm, stir in enough extract of roses for flavor.

Assemble and set

  1. Line two moulds with lady cake or almond sponge cake.

  2. Fill the moulds with the mixture and set on ice.

  3. Before serving, ice the tops with rose‑flavored icing.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass or gelatine
Sets the cream mixture into a firm, sliceable structure as it chills.
Cream
Provides richness and a smooth, creamy texture.
Eggs
Thicken the custard base and add richness and body.
Egg yolks
Add extra richness and help thicken the custard smoothly.
Fine loaf sugar
Sweetens the mixture and softens the set texture slightly.

The step that matters

Return to low heat and do not let it boil. Egg-thickened custards can curdle or turn grainy if overheated. Gentle heat lets the eggs thicken the cream smoothly while the mixture just simmers.

Swap the almond

How well each one fits the dish's main ingredients (cream, sugar, rose, egg):

  1. Almondthe original
  2. Pistachiofits about as well
  3. Walnutfits less well
  4. Chestnutfits less well

Fit is the average pairing score against cream, sugar, rose, egg. Candidates are from the same food group and used in at least 100 recipes.
