Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass or gelatine
Sets the cream and chocolate mixture into a firm, sliceable structure as it chills.
Cream
Provides richness and a smooth, moist texture to the set dessert.
Egg yolks
Thicken the mixture and add richness when gently heated.
Egg whites
Whipped to a froth, they lighten the mixture and add airy texture.
Powdered sugar
Sweetens the mixture and dissolves smoothly into the chocolate base.
Chocolate
Provides the main flavor and color of the dessert.

The step that matters

Simmer without boiling. Egg yolks curdle and turn grainy if they get too hot, so the mixture must stay at a gentle simmer and never boil.

Swap the cocoa

The recipe marks cocoa as optional. How well each one fits the dish's main ingredients (chocolate, cream, egg, sugar):

  1. Almondfits better
  2. Hazelnutfits better
  3. Pecansfits better
  4. Cocoathe original

Fit is the average pairing score against chocolate, cream, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
